Masala Dosa Recipe:

Ingredients:


For Batter:

- 1 cup of Idli rice

- 1/2 cup of urad dal

- 1 tablespoon of salt

- Water as required

- 4 medium-sized boiled potatoes, peeled and mashed

- 2 tablespoons of oil

- 1 1/2 teaspoons of mustard seeds

- 1/2 teaspoon of turmeric powder

- 10-12 curry leaves

- 2 medium-sized finely chopped onions

- 2 finely chopped green chilies

- Salt as required


For Chutney:

- 1/2 cup grated coconut

- 1-2 green chilies

- 1 small onion

- Salt as required


Instructions:


Preparing The Batter:

1. Rinse the idli rice and urad dal thoroughly.

2. Soak the rice and dal separately for at least 6 hours or overnight.

3. Once soaked, blend the urad dal with little water until smooth.

4. Grind the idli rice separately in a mixer or grinder to a fine batter consistency.

5. Mix the rice and urad dal batter well, add salt and water as required, and make a smooth batter.

6. Cover the batter with a lid and keep it in a warm place for fermenting for at least 8 hours.


Preparing The Masala Filling:

1. Heat oil in a pan and add mustard seeds.

2. Add curry leaves, turmeric powder, onions, and green chilies and sauté for 2-3 minutes.

3. Add mashed potatoes, salt, and mix well. Cook for 5-6 minutes while stirring occasionally.

4. Turn off the flame and allow it to cool.


Preparing The Chutney:

1. In a blender or grinder, grind the grated coconut, chopped onion, green chilies, and salt into a smooth paste.

2. Transfer the chutney to a serving bowl.


Preparing The Dosas:

1. Heat a non-stick pan or a cast-iron skillet on medium flame for 4-5 minutes.

2. Once the pan is hot, pour a ladle full of the batter in the center of the pan and spread it in a circular motion to form a thin pancake.

3. Drizzle a little oil around the dosa and cook it for 2-3 minutes until the edges turn golden brown.

4. Flip the dosa on the other side, and cook it for another minute.

5. Place a spoonful of the potato filling on the dosa and fold it in half.

6. Repeat the process with the remaining batter and potato filling.


Serving The Masala Dosa:

1. Serve the masala dosa with the coconut chutney and sambar on the side.

2. You can also add some chopped coriander leaves and grated coconut on top of the dosa.
